Rybne burgery z ciecierzycą / Fish and chickpeas burgers

W mojej kuchni nic nie może być “normalne”, burgery też nie z mięsa, a z ciecierzycy i świeżego łososia… 🙂

Mięsne też robię, ale tym razem miałam ochotę na lżejsze wydanie tej potrawy raczej nie kojarzącej się ze zdrowym odżywaniem. Chciałabym odczarować hamburgery

, gdyż, robione w domu, są bardzo dobrym i zdrowym posiłkiem, zawierającym wszystko co potrzebne – białko, warzywa, węglowodany – pełnowartościowy obiad/kolacja! W wersji mini – idealna przekąska.

Ja tym razem robiłam wersje pełnowymiarową z grahamkami, świeżymi warzywami, domowej roboty sosami – samo zdrowie i jak smakuje… Miłego gotowania!


In my kitchen nothing can be „normal” even the burgers aren’t made of meat, but from chickpeas and fresh salmon… 🙂

I’m making the regular, meat ones but this time I felt like eating the lighter version of this, rather heavy and associated with unhealthy food, dish. I’d like charm away the burgers,  cause, made at home, they are very tasty and healthy dish which includes all you need – protein, vegetables, carbohydrates – ideal lunch/dinner! In mini version – perfect snack.

This time normal sized version with graham buns, fresh veggies, homemade sauces – only health and tastes best… Have fun cooking!

SKŁADNIKI:

Kotlety:
1 szklanka ciecierzycy
300 g łososia
1 mała czerwona cebula
1 jajko
1-2 łyżki bułki tartej
1 łyżka oleju/oliwy

Dodatki:
sałata
czerwona cebula
żółty ser
pomidor
ogórek konserwowy/kiszony/świeży
chutney z czerwonej cebuli (opcjonalnie)

Sos czosnkowy:
2-3 łyżki jogurtu greckiego
1 łyżka majonezu
1-2 ząbki czosnku
zioła prowansalskie, sól, pieprz

Sos ketchupowy:
1-2 łyżki jogurtu greckiego
1 łyżeczka majonezu
1 łyżka ketchupu
1 łyżeczka musztardy


INGREDIENTS:

Burgers:
1 cup of dry chickpeas
300 g salmon
1 small red onion
1 egg
1-2 tablespoon bread crumbs
1 tablespoon oil/olive oil

Extras:
salad
red onion
cheese
tomato
pickled/fresh cucumber
red onion chutney (optional)

Garlic sauce:
2-3 tablespoons Greek yogurt
1 tablespoon mayonnaise
1-2 garlic cloves
herbs de Provence, salt, pepper

Ketchup sauce:
1-2 tablespoon Greek yogurt
1 teaspoon mayonnaise
1 tablespoon ketchup
1 teaspoon mustard

Ciecerzycę przygotwujemy jak na hummus (instrukcja TUTAJ). Po ugotowaniu miksujemy na gładką masę ręcznym blenderem. Łososia trzeba umyć i osuszyć, usunąć ości (ja do tego używam kombinerek ;)) i oskórować, a następnie drobno posiekać. Pół czerwonej cebuli też drobno siekamy, trzeba ją zeszklić na rozgrzanej patelni z odrobiną tłuszczu i odstawić do przestudzenia. W sporej misce mieszamy wszystkie składniki dodając jajko, bułkę tartą i pietruszkę, tak, aby powstała jednolita masa, z której będziemy lepić kotlety.

Przed rozpoczęciem formowania burgerów rozgrzewamy patelnię z łyżką tłuszczu, kotlety trzeba smażyć na bieżąco. Przed formowaniem kotletów warto zwilżyć ręce, wtedy masa nie będzie się nam kleiła do dłoni. Burgery powinny być wielkości bułek, w które będziemy je wkładać, nie większe, nie mniejsze, grubość – mniej więcej 1 cm. Smażymy po kilka na patelni, po mniej więcej 10 minut z każdej strony, aż burgery zezłocą się z obu stron. Zdejmujemy na talerz wyłożony ręcznikami papierowymi – wchłoną nadmiar tłuszczu.

Sosy – nic prostszego – wszystkie składniki mieszamy tak długo, aż sosy będą miały jednolitą konsystencję.

Warzywa kroimy na plasterki, bułki na pół, sałatę rwiemy na mniejsze kawałki (łatwiej będzie ją układać). Jedną połowę smarujemy jednym sosem, drugą drugim, nie za dużo, bo ciężko będzie potem jeść burgery. Wszystkie składniki układamy na spodzie bułki, kolejność dowolna 🙂 Ja ułożyłam po kolei – chutney, ser, sałatę, burgera, cebulę, pomidora i ogórka, na wszystko góra od bułki. Jak burger stoi o właśnych siłach lekko dociśnij górę do reszty, żeby wszystko się ładnie ułożyło.

Prepare the chickpeas like for the hummus (instructions HERE). After cooking and chilling blend the beans into smooth paste. Rinse and dry the salmon, remove the fish bones (I use pliers ;)) and the skin, chop it. Chop half of the onion and glaze it on frying pan heated with a spoon of oil, leave it for chilling. Mix it all together in a bowl adding all the above ingredients and egg, bread crumbs and chopped parsley to a smooth paste of which we are going to make the burgers 🙂

Before forming the burgers preheat the pan with a tablespoon of oil, you have to fry the cutlets once they’re formed. It’s easier to form the burgers when your hands are moist – the burgers won’t stick to your hands. Burgers should be same size as the buns, not less, not more, 1 cm thick. Fry it for about 10 minutes each side, just for the burgers to get golden. Put them on a plate with paper towels – they will take the grease away.

Sauces – nothing simpler 🙂 Combine all the ingredients until they’ll became a smooth dip.

Cut the vegetables in slices, bread rolls in half, rip the salad into smaller pieces (it will be easier to put it into rolls). Cover one half  with garlic dip the other with the other, not too much cause it’ll be easier to eat. Put all the ingredients on the bottom part of the roll, on on the other, the order doesn’t matter 🙂 I’ve put chutney first, than cheese, salad, burger, onion, tomato and cucumber and I’ve covered it with the top part of the roll. When the burger finally stands on its own gently press the top part of the roll- it’ll make all ingredients fit together better.

Tak wygląda efekt końcowy – tak samo pyszny jak na zdjęciach! Smacznego!
