Sałatka z kaszy jaglanej z awokado / Millet and avocado salad

Z przyjemnością powtarzam ją w swojej kuchni i rozpowszechniam, bo warto! 🙂

Millet in this version is really surprising! Perfect for breakfast or dinner as an addition to sandwiches or solo, perfect for parties, and don’t let me forget that it is perfect for lunch in the office.

When I did this salad first time I was skeptical – I didn’t know what will it be, and it became delicious. With pleasure I’m coming back to it from time to time and spread it to the world – it is worth it! 🙂

SKŁADNIKI (na dużą miskę):

2 torebki (200 g) kaszy jaglanej
350-400 g piersi kurczaka

10-12 pomiorów suszonych
1 średni ogórek
1 duże awokado

Sos:
oliwa
sok z cytryny
sól, pieprz, koperek

INGREDIENTS (for a big bowl):

200 g millet
35-400 g chicken breast
10-12 dried tomatoes
1 medium cucumber
1 bug avocado

Sauce:
olive oil
lemon juice
salt, pepper, dill

Kaszę ugotuj wg informacji na opakowaniu, odlej i przesyp do sporej miski.

Kurczaka umyj, osusz, oczyść z błon i pokrój na niewielkie kawałki. Włóż do miski i wymieszaj z łyżką oliwy i ulubionymi ziołami – u mnie tym razem przyprawa do kurczaka i odrobina ostrej papryki.

Zdejmij go z patelni i pozostaw o ostygnięcia.

Boil the millet as it is written on the package, drain it and put into a big bowl.

Rinse the chicken, dry it, cut out all the unnecessary pieces and cut the rest into medium pieces. Put it all in a bowl and mix with a spoon of olive oil and favorite herbs – this time I’ve marinated my chicken with chicken mix and a bit of hot pepper.

Preheat the pan with a spoon of oil. Put the chicken with the herb on the pan and fry it until all the water, which will come out of the meat, evaporates, and the chicken will became a bit golden. Take it off the pan and leave to chill.

When the chicken is frying cut the vegetables (mix the chicken from time to time to avoid burning it). Dried tomatoes cut into thin slices (0,5 cm). Wash the cucumber thoroughly, cut the ends off, cut it along into half, remove the pips and the pulp. Again – cut it along into half i than across into pieces similar to tomatoes. Cut the avocado into half, remove the pip, use the spoon to take the pulp out of the shell. Cut the pulp along into half and again into similar pieces as cucumber and tomatoes.

Put the olive oil, juice from half of the lemon and spices into a jar (leave the dill aside). Close the jar and shake it to mix the ingredients inside. Taste the sauce – if it is to sour add a bit of water (or olive oil) if you can’t taste the lemon squeeze a bit of juice more.

Now we’re about to finish – put all the ingredients in a bowl big enough that you can easily mix it all together. Cover everything with sauce from the jar and mix it carefully – finished! 🙂

It is good to leave this salad for an hour in the fridge for the flavors to combine but you can it at once 😉
