Rosół drobiowy / Chicken broth

Rosół, podstawa podstaw. Baza do wszystkich zup, przydatny przy gotowaniu sosów, pieczeniu mięs. Dzisiaj klasyczny, drobiowy, z którego powstaną dwie zupy – pomidorowa i kokosowa z kurczakiem, ale to w najbliższej przyszłości – dziś rosół gra główną rolę.

Przepis niewiele się różni od przepisu na rosół wołowy, który gotowałam jakiś czas temu.


Broth, the base of all bases. You use it any other soups, when making sauces, to bake meats. Today we’ll make a classic chicken broth, from which we’ll make two different soups – tomato and coconut with chicken, but not today –  now the broth plays the main role.

The recipe is very similar to beef broth, which I made some time ago.


SKŁADNIKI:

1-2 ćwiartki kurczaka
1 włoszczyzna
1 cebula
2-3 ząbki czosnku
ziele angielskie
pieprz w ziarnach
liście laurowe
3-4 pepperoncino


INGREDIENTS:

1-2 hams of chicken
1 vegetables for making soup
1 onion
2-3 garlic cloves
allspice
peppercorn
bay leaves
3-4 pepperoncinos


Mięso umyj, włóż do garnka, wsyp łyżkę soli zalej zimną wodą i odstaw na 1-2 godziny.

Warzywa obierz, cebulę opiecz nad palnikiem, jeśli nie masz kuchenki gazowej opiecz ją w piekarniku.

Gdy mięso się 'wyleży’ w solance opłucz je i włóż z powrotem do garnka, zalej wodą i zacznij gotować na średnim ogniu. Gdy mięso zacznie się gotować sukcesywnie zdejmuj szumy, aż przestaną wypływać na powierzchnię. Jeśli przy okazji zdejmowania szum rosół radykalnie zmniejszył swoją objętość (w moim przypadku zawsze ;)),  zagotuj wodę w czajniku i dolej trochę wrzątku do garnka.

Dorzuć warzywa i przyprawy i postaw na najmniejszym możliwym ogniu, żeby rosół delikatnie 'mrugał’. Gotuj go powoli, kilka godzin, aż rosół osiągnie swój smak.

Przelej rosół przez sito do drugiego, mniejszego garnka. Ja z warzyw zostawiam wszystko oprócz pora, resztę kroję i wykorzystuję do innych zup, gdyż rzadko kiedy jem czysty rosół, raczej jest on podstawą do jakiejś innej zupy. Mięso obieram z kości i też dorzucam do zupy – lubię kiedy zupa jest 'treściwa’.


Wash the meat, put it into a big pot, add a spoon of salt, pour cold tap water, mix and let it lay for 1-2 hours.

Peel the vegetables, brown the onion over the burner, if you don’t have gas kitchen put in the oven under grill.

When the is done with laying in salty water wash it and put back in the pot, fill it with fresh cold tap water and start to cook on a medium heat. When it start to boil remove the floating 'foams’ until they will stop to appear. If you’ll reduce too much the broth with removing these foams (in my case – always ;)) boil a kettle of water and refill the soup, of course the less the better.

Add the vegetables and spices, put the pot on the lowest heat possible so the broth will cook really slowly, that the bubbles will be small and slow. Let it cook for few hours, until it will become tasty.

Strain the broth through a sieve to another, smaller pot. If you like you can leave all the vegetables, when it comes to me – I remove only the leek, the rest I cut into slices and use them in another soup. Separate the met from the bones and leave it for next soup too – I like when the soups have some 'content’. I drink only the broth from a cup.


Ja lubię pić rosół z kubka, nie przepadam za jego wersją z makaronem, ale to Twoja decyzja jaką wersję lubisz najbardziej. Tak czy inaczej – smacznego!


I like the broth from the cup, I don’t like it when it’s served with noodles. I like to drink it, but so enjoy it the way you like best!
