Quesadilla z indykiem lub wołowiną / Turkey or beef quesadilla

Kuchnia meksykańska kojarzy mi się papryczkami chilli, burrito i chilli con carne, a ja nie przepadam za bardzo ostrym jedzeniem. Stąd też quesadilla – delikatne danie gdzie podstawą jest ser (hiszp. quesa – ser).

Jedyne co potrzebujesz, żeby zrobić to danie to warzywa, ser i tortille oraz pół godziny. To sprawia, że jest to idealne danie zarówno na imprezową przekąskę jak i na szybki lunch lub kolację po pracy!

Buritto też będziemy robić, chilli con carne też, ale nie dziś – teraz czas na ser.

When I think about Mexican cuisine first thing I see is chilli peppers, burrito and chilli con carne, and I’m not a fan of spicy food. That’s why I’ve made quesadilla – delicate dish with cheese in the main role (Spanish „quesa” – cheese).

There are only few ingredients that you need – vegetables, cheese and tortillas and half an hour. This makes the dish perfect for party snack as well for fast lunch or dinner after work!

Don’t worry – we will be making burrito, chili con carne also, but not today – now it’s time for cheese. Have fun cooking!

SKŁADNIKI (na 12 kawałków):

4 pszenne tortille
1 pierś kurczaka
1 stek wołowy
1 FOOD średnia cebula

1 średnia papryka żółta
1 średnia papryka czerwona
1/2 sporej cukinii
10 pieczarek
1/2 puszki kukurydzy
200 g żółtego sera, np.: gouda
100 g sera typu cheddar

Guacamole:
1 1/2 awokado
1/2 cebuli
1/2 pomidora
sól, pieprz, oliwa

Marynata do mięsa:
oliwa z oliwek
woda
ostre papryczki
ocet balsamiczny
sól, pieprz


INGREDIENTS (12 pieces):

4 tortillas
1 chicken breast
1 beef steak
1 How medium onion

1 medium yellow pepper
1 medium red pepper
1/2 quite big zucchini
10 mushrooms
1/2 can of corn
200 g cheese, eg. Gouda
100 g cheddar

Guacamole:
1 1/2 avocado
1/2 onion
1/2 tomato
salt, pepper, olive oil

Meat marinade:
olive oil
water
hot peppers
balsamic vinegar
salt, pepper

Wszystkie składniki myjemy i suszymy. Warzywa oraz mięso kroimy, warzywa w dość drobną kostkę, mięso w wąskie paski.

Ser ścieramy na tarce – goudę na większych, cheddara na mniejszych oczkach. Składniki marynaty mieszamy w słoiczku i marynujemy mięso, odstawiamy na bok, niech się chociaż trochę „przegryzie” 🙂

Do tej potrawy przydadzą się dwie patelnie – zdecydowanie usprawni to pracę. Na jednej patelni smażymy warzywa – po kolei – cebula, papryki, cukinia, pieczarki. Całość smażymy aż wszystkie warzywa zmiękną.

Na drugiej patelni, w tym samym czasie, smażymy mięso – osobno kurczaka i wołowinę.

Gdy warzywa i mięso są gotowe układamy wszystkie skłądniki po kolei na tortilli – najpierw warstwa serów, potem mięso, warzywa z patelni i kukurydza, na wierzch znowu wartwa serów i wszystko przykrywamy drugą tortillą.

Rozgrzewamy patelnię grillową i smażymy tortillę najpierw z jednej strony tak, aby pojawiły się na niej złoto-brązowe pasy. Teraz operacja „przewracanie qesadilli”, wbrew pozorom nie taka straszna, ale wymaga odrobinę zabawy 🙂 Weź talerz na tyle duży, żeby zmieściła się na nim swobodnie cała quesadilla, połóż go do góry dnem na smażącej się na patelni quesadilli, jedną ręką trzymaj patelnię drugą talerz. Teraz szybkim i stanowczym ruchem przekręć całość tak, aby quesadilla znalazła się na talerzu. Teraz wystarczy zsunąć quesadillę z powrotem na patelnię i smażyć drugą stronę tak, aby spód się przyrumienił, a ser rozpuścił.

Guacamole to już tylko formalność 🙂 Obieramy awokado – najpierw przekrawamy na pół, wyjmujemy pestkę i łyżeczką wydłubujemy miąższ, kładziemy na talerzu i rozgniatamy widelcem. Cebule kroimy na drobną kosteczkę. Pomidora parzymy, obieramy ze skórki, przekrawamy na pół i wydłubujemy pestki łyżeczką, nie będą nam potrzebne, resztę kroimy na dość drobną kostkę. Wszystko wkładamy do miseczki i mieszamy z odrobiną oliwy i sokiem z połowy limonki, doprawiamy do smaku solą i piperzem.

Wash and dry all the ingredients. Cut the vegetables and meat, vegetables into small cubes, meat into thin slices.

Grate the cheese – Gouda on big, cheddar on small grate mesh. Put all marinade ingredients into a jar and mix all together. Put the meat into the marinade and leave it for a sec 🙂

To prepare this dish it’s good to have two pans – it will quicken your work. On the first pan fry all the vegetables – onion, peppers, zucchini, mushrooms – until they’ll soften. On the other an fry the meat separately chicken and beef.

When the vegetables and meat are ready put all the ingredients on the tortilla – first the cheeses, than meat, fried vegetables and corn, cheese again on the top, cover everything with the second tortilla.

Heat up the pan grill and fry the quesadilla on medium heat on one side until it will get golden-brown stripes on the bottom. Noe operation „quesadilla turning” begins, it is not as hard as it sounds 😉 Take a plate big enough for the quesadilla to fit, put it on the pan with quesadilla bottoms up. Put one hand on the plate, hold the pan with the other. Now you have to make a fast move and turn everything upside down so the quesadilla will be on the plate. Now slide the quesadilla back to the pan and fry it on the other side until it gets golden on the other side and the cheese will melt.

Guacamole is now just a formality 🙂 Cut the avocado in half, take out the pip and take the pulp out with a teaspoon, put it on a plate and smash with a fork. Cut the onion into really small cubes. Blanch the tomato and peel it off, cut into half and remove the pips, we won’t need them anymore, cut the rest into small cubes. Put all of that info a small bowl mix it with a bit of olive oli, juice from half of lime, season with salt and pepper.

Teraz wystarczy zdjąć quesadillę z patelni, pokroić jak pizzę i zjeść! Smacznego! 🙂


Now all you have to do is take the quesadilla off the pan, cut it like pizza and eat! Bon appetit! 🙂
