Tarta z kurkami i jarmużem / Chanterelle & kale tart

Dobra tarta – fajna sprawa. Nie ma z czym dyskutować. Z tartą, tak naprawdę, jest jak z pizzą – praktycznie wszystko może się na niej znaleźć. Ja postanowiłam się, po raz chyba ostatni w tym roku, rzucić na kurki.

Podany poniżej przepis jest prosty, a ciasta spokojnie wystarczyło na wyłożenie formy o średnicy 28 cm.


A good tart is a good thing. There’s no argue with that. Tart has something in common with pizza – you can put practically everything in it. I’ve decided to use, I think for the last time his year, chanterelle mushrooms.

The recipe below is easy, and the pastry is enough to fill the form with diameter 28 cm.

SKŁADNIKI (6 kawałków):

Ciasto:
75 g masła
60 g mąki pszennej
60 g mąki żytniej razowej
1 jajko
1 żółtko
szczypta soli i proszku do pieczenia

Farsz:
300 g kurek
200 g jarmużu
1 średnia czerwona cebula

200 g sera typu bałkańskiego
200 g jogurtu greckiego
1 jajko
sól, pieprz, estragon


INGREDIENTS (6 pieces):

Pastry:
75 g butter
60 g white flour
60 g rye flour
1 egg
1 egg yolk
pinch of salt and baking powder

Filling:
300 g chanterelle mushrooms

200 g kale
1 medium red onion

200 g Balkan type cheese (feta)
200 g Greek yogurt
1 egg
salt, pepper, tarragon

Najpierw ciasto – ja do początkowego gniecenia ciasta używam robota kuchennego, dopiero pod koniec pracy robię to ręcznie. Wszystkie składniki ciasta umieść w misce robota, albo jeśli nie masz robota – na stolnicę. Kruchego ciasta nie powinno się wyrabiać ręcznie, żeby nie rozgrzewać masła, dlatego też składniki początkowo najlepiej siekać długim nożem. W momencie, w którym składniki połączą się na tyle, że dalsza praca robota albo siekanie nic już nie zmieni, czas na pracę ręczną. Zagniatamy ciasto jak najkrócej, ale tak, żeby miało gładką, jednolitą konsystencję. Zawiń ciasto w folię spożywczą i odłóż do lodówki na minimum godzinę.

Kurki i jarmuż umyj, cebulę obierz. Co większe kurki pokrój na mniejsze kawałki, tak aby wszystkie były mniej więcej tej samej wielkości. Cebulę pokrój w kostkę. Na sporej patelni rozgrzej łyżkę oleju i zeszklij cebulę, dodaj jarmuż i jak zmięknie, dodaj kurki. Duś wszystko razem aż kurki puszczą wodę, a ta odparuje z patelni, odstaw farsz na bok, niech przestygnie

Rozgrzej piekarnik do 180 stopni. Po upływie godziny wyjmij ciasto z lodówki, poczekaj chwilę i dość cienko rozwałkuj, tak aby było na tyle duże, żeby wypełniło formę. Przy pomocy wałka przenieś ciasto ze stolnicy na formę. Ułóż je dokładnie w formie, dociśnij do dna w rogach formy. Obetnij wystające poza formę ciasto i wyklej nim miejsca gdzie go brakuje, albo pojawiły się dziury. Przy pomocy widelca nakłuj ciasto, ułóż na wierzchu papier do pieczenia i wysyp np. fasolę. Wstaw do rozgrzanego piekarnika na około 15 minut.

W misce wymieszaj jogurt, jajko i przyprawy. Pokrusz ser.

Po upływie tego czasu wyjmij ciasto i wyłóż na nie zawartość patelni, pokruszony ser rozsyp równomiernie na wierzchu, całość zalej jogurtowo-jajeczną mieszanką. Zmniejsz temperaturę w piekarniku do 150 stopni, wstaw tartę i piecz około 20-25 minut, na oko, sprawdzając czy już ser się lekko rozpuścił, a zalewa ścięła.

First the pastry – in the beginning I use a robot to mix the ingredients, I use my hands in the end of work. Put all the ingredients in the robot bowl, or if you don’t have it – on the moulding board. You shouldn’t knead shortcrust pastry with your hands, cause you shouldn’t warm the butter, so it’s best to chop the ingredients with a long, smooth knife. When they combine that much that you can’t do more with the knife/robot it’s time for hand work. Knead the pastry as short as possible until it will be smooth. Wrap it in the foil and put into the fridge for minimum an hour.

Wash the mushrooms and kale, peel the onion. Cut bigger chanterelles into smaller piece so they’ll have similar size. Chop the onion. Preheat rather big pan with a tablespoon of oil, add the onion to it and glaze it, add the kale and let it soften, add the mushrooms in the end. Fry it all together until the chanterelles will loose all the water and it’ll evaporate, put it aside to cool down.

Preheat the oven up to 180 degrees C. Take the pastry out of the fridge after an hour, let it b for a while and roll it thinly so it’ll fill the tart form. Using the roll move the pastry from the counter to the form. Make sure that it lies flat in he form, push it a bit in the corners. Cut off the pastry which hangs out of the form and, if necessary, fill the holes that appeared 🙂 Using a fork make holes in the pastry, put baking paper on it and fill with dry beans. Put it that way into hot oven for about 15 minutes.

Mix the yogurt, egg and spices in a bowl. Crush the cheese.

After 15 minutes take the pastry out of the oven and fill it with what’s on the pan, sprinkle it with crushed cheese and pour over the yogurt mix. Lower the temperature to 150 degrees C and put the tart in, bake it for about 20-25 minutes, checking from time to time if the cheese melted a bit and the yogurt mix is stiff.

Jedyne co zostaje to pokroić tartę na kawałki, dorzucić trochę zieleniny i jeść!


There’s only one thing left to do – cut the tart into pieces, add a bit of greenery and eat!
