Fusilli ze szpinakiem i pomidorami / Spinach and tomatoes rye fusilli

Lately I’m all about pasta. How much of rice can you eat?

In my fridge I had a lot of tomatoes and a total lack of felling for tomato sauce, same as for going to the shop for groceries. I opened the freezer – spinach, I always have cheeses in my fridge, I couldn’t live without them. Behind the spinach – pork chops – ok, let’s go!

Out of combining my laziness with the content of my fridge came a nice and simple dinner.

SKŁADNIKI:

1 średnia cebula
100 g sera typu lazur
400 g mrożonego szpinaku
4-5 pomidorów
2-3 ząbki czosnku
360 g schabu w plastrach
200 g jogurtu greckiego

czerwony pieprz, sól

INGREDIENTS:

1 medium onion
100 g blue cheese
400 g frozen spinach
4-5 tomatoes
2-3 garlic cloves
360 g sliced pork chop
200 g Greek yogurt
red pepper, salt

Dodaj szpinak, jeśli był czas, żeby go rozmrozić – super, odsącz go, jeśli nie – trudno.

Pokrojony w paski schab wkładamy do miski i marynujemy przez chwilę w oliwie wymieszanej z świeżo zmielonym/utartym czerwonym pieprzem i solą morską.

Preheat quite big pan with a tablespoon of oil. Chop the onions, the cubes don’t have to be very small, as it fits you and put them on the pan. After a while add the spinach, if you had time to defrost it – good, drain it a bit, if not – nothing happened. Fry it all together until onions and spinach are combined. When the water from the spinach evaporates add yogurt with cheese cut into big cubes and spices.

While the sauce is frying it’s for meat. Rinse and dry the pork. You can cut the slices into stripes at once, but I prefer to smash the chops a bit. To keep the meat mallet and chopping board clean (and yourself :)) put the meat into food foil, both sides and then smash it a bit. When it’s already cut in stripes put it into a bowl and marinade it in olive oil mixed with freshly grounded red pepper and sea salt.

In the meanwhile boil a kettle of water, gently cut the skin of tomatoes, put them into a bowl and pour boiling water over them for the water to cover the vegetables. Put aside.

When all the water from yogurt evaporates from the sauce add peeled and cut into rather big pieces tomatoes. Fry everything together until it combines but the tomatoes won’t fall apart.

On separate pan preheat a tablespoon of oil and fry the meat. You don’t have to fry it for a long time cause the pieces are thin.

Last thing to do is put it all together on a plate – first the pasta, then the sauce and finally the meat, enjoy!
