Moussaka

Moussaka to taka grecka lasagna tylko zamiast makaronu mamy warzywa. Sam sos też jest troszeczkę inaczej przyprawiony niż w kuchni włoskiej, ale zasada jest ta sama – warstwa warzyw, warstwa mięsa, warstwa warzyw itd.

Oryginalnie moussaka zalewana jest beszamelem, jednak ja nie przepadam za tym dość ciężkim maślano-mącznym sosem, dlatego w moim wydaniu sos jest lekki – jogurtowy, który, moim zdaniem, absolutnie nie niszczy smaku potrawy.

Trochę zabawy podczas gotowania jest, ale efekt końcowy jest naprawdę smaczny i warto spędzić ten czas w kuchni 🙂


Moussaka is a Greek lasagna only instead of pasta we have vegetables. The sauce itself has also a bit different seasoning than in Italian cuisine, but the rule is the same – a layer of vegetables, a layer of meat, a layer of vegetables and so on.

Originally moussaka is covered with bechamel sauce, but I’m not a great fan of that heavy buttery-flour sauce, so in my version of it the sauce is light – yogurt based, which, in my opinion, doesn’t ruin the taste of original dish.

There’s a little bit of fun while cooking, but the final effect is really tasty and it’s worth the time which you’ll spend in the kitchen 🙂

SKŁADNIKI (6 porcji):

700 g wołowiny (u mnie udziec)
150 g cebuli
500 g bakłażana
100 g sera typu Cheddar
300 g ziemniaków
200 g jogurtu greckiego
2 jajka
1 puszka (400 g) pomidorów
1 karton (500 g) przecieru
3 duże ząbki czosnku
świeżo mielony pieprz, sól
papryka ostra, słodka

INGREDIENTS (6 portions):

700 g beef (this time a haunch of beef)
150 g onion
500 g eggplant
100 g Cheddar cheese
300 g potatoes
200 g Greek yogurt
2 eggs
1 can (400 g) tomatoes
1 box (500 g) tomato puree
3 big garlic cloves
freshly grounded pepper, sea salt
sweet and hot peper
chili
cinnamon

Umyj i osusz bakłażana, pokrój na mniej więcej centymetrowe plastry, posól delikatnie i odstaw na bok na chwilę. Podobno nie trzeba tego robić, ale mi to weszło w nawyk 🙂 Ziemniaki obierz i umyj. Cebulę obierz i drobno poszatkuj.

Ja nie kupuję mięsa mielonego, tylko sama je mielę, w ten sposób wiem co jem, bo, tak naprawdę, jak kupujemy mięso mielone nie wiemy co zostało zmielone. Mięso pokrój na mniejsze kawałki, takie, żeby zmieściły się do maszynki i zmiel. Przypraw świeżo mielonym pieprzem, solą, estragonem, odrobiną ostrej i słodkiej papryki. Dokładnie wymieszaj.

Na sporej patelni rozgrzej łyżkę oleju i wrzuć posiekaną cebulę, zeszklij ją, dodaj czosnek i podsmaż przez chwilę. Dodaj mięso i smaż wszystko razem aż mięso się poddusi, dodaj pomidory, przypraw do smaku tymi samymi przyprawami, które dodawane były do mięsa dodając do tej mieszanki chili i, uwaga, szczyptę cynamonu. To jest tajemniczy składnik dodawany do moussaki. Duś wszystko aż sos zgęstnieje, warto zaopatrzyć się w pokrywkę z siatki – zminimalizuje to zdecydowanie bałagan na kuchence.

W czasie kiedy sos gęstnieje czas na bakłażana, którego trzeba podsmażyć na patelni grillowej z obu stron. Gdy bakłażan jest na patelni czas na ziemniaki, możesz je pokroić nożem na cienkie plastry albo użyć do tego mandoliny – ja wybrałam drugą opcję.

W misce wymieszaj jogurt, jajka i starty na drobnych oczkach ser z odrobiną pieprzu. Rozgrzej piekarnik do 180 stopni C.

W naczyniu żaroodpornym, lekko wysmarowanym tłuszczem, na dnie ułóż warstwę bakłażana, na bakłażanie ziemniaki, na ziemniakach sos mięsny i tak dalej aż do momentu, w którym nie będzie z czego tych warstw układać. Na końcu całość polej sosem jogurtowym, posyp odrobiną sera. Wstaw moussakę do rozgrzanego piekarnika i piecz 25-30 minut, na oko, aż wierzchnia warstwa się zarumieni.

Wash and dry the eggplant, cut it into 1 cm slices, salt it a bit and put aside for a while. They say that you don’t have to do it, but I kinda got used to it 🙂 Peel the potatoes and wash them, peel the onion and chop it finely.

I don’t buy minced meat, I mince it myself, cause only this way I know what I’m eating, when you buy ready minced meat you don’t really know what’s in it. Cut the meat into pieces so they can go into mincing machine and mince it. Season the meat with freshly ground pepper, salt, estragon, a bit of hot and sweet pepper. Mix it thoroughly.

Preheat a tablespoon of oil on a big pan, add chopped onion and glaze it, add pressed garlic and fry together for a while. Add the meat and fry it mixing until meat will simmer a bit, add tomatoes, season the sauce with same spices which were added do raw meat and add a bit of chili and a pinch of cinnamon. This is the secret ingredient for moussaka. Simmer the sauce until it thickens.

In the meantime it’s time to prepare the eggplant, which has to be grilled. When the eggplant os on the grill pan it’s time for  potatoes – you have to cut them into thin slices, you can use a knife or a grater.

Mix the yogurt, eggs and finely grated cheese with a bit of pepper in a bowl. Preheat the oven up to 180 degrees Celsius.

In a heatproof vessel, which has to be covered with a thin layer of fat, make a layer of eggplant, then potatoes, after that the sauce and so on until you won’t have any more ingredients to make the layers. Pour the white yogurt sauce on the top of it, sprinkle with a bit of cheese. Put it into the oven and bake for about 25-30 minutes, until you’ll see the cover had bronzed.

Z tej ilości składników powstaje 6 sycących porcji pysznej i zdrowej moussaki. Ja bardzo lubię jeść moussakę z sosem czosnkowym (uwielbiam czosnek), ale nie jest to obowiązkowe, tak czy inaczej – smacznego!


From that amount of ingredients you’ll get 6 filling portions of delicious and healthy moussaka. I like to eat it with garlic sauce (I love garlic), but it’s not obligatory, anyway – bon appetite!
